Your mouth may be watering right now as you read the title, I know mine is! I have searched and tried many recipes for appetizers and this is the one I came up with myself. It's so easy and will please your family, friends, and any party you have! I always am alternating my current recipes for healthier substitutes and always exciting when you can find something that delicious!
-Large stock pot or frying pan
-2 or more large onions-white onions are the best but you can also use red onions.
-Salt & pepper to taste
-1-2 cups Cassava flour-can substitute with : coconut flour, tapioca starch, arrowroot starch, or any four really
-1 cup Sunflower oil: can use other oils but use something not hydrogenated or vegetable oils. Try using coconut oil or avocado oil if you do not have sunflower oil. Sunflower oil doesn't leave a taste so that's why I like to use it!
-Garlic salt to taste
-1-2 cups Secret ingredient: Goat Milk! You can use other milks of course but for us, goat milk is what we have on our farm and it's the most nutritious and easy on the stomach! Nut milk will work as well, you just may get an 'off' taste.
*Prep your onions by slicing them and separating the rings. Then place into a large bowl. Add your milk to the bowl and allow the onions to soak in the milk for at least an hour. I prefer to soak them overnight if I can. It will absorb the strong onion taste and make them tender with a buttermilk taste!
*Preheat your pot or pan, or deep fryer to medium. Place your oil in with about 1 cup. You may need to add more if you are doing a larger amount. When you are ready to batter them, take your flour and place into a separate bowl and a put 1-2 cups of flour ( depending on how many onions rings) and add your salt & pepper and garlic salt (I add in at least a tsp of each).
Mix together. Take out your onions and drain the milk out. Toss the onion rings one by one in the flour mixture and coat well. Shake off extra flour. They should be coated on each side. Get your plate ready with paper towels for after cooking.
*To cook, make sure your pot or pan is medium hot and place the rings in, being careful not to overlap them. Let them cook for a couple minutes and then flip to the other side. You will see them get golden brown. Watch them closely so they don't burn. Place them onto your paper towel prepped plate and enjoy! Repeat till you have all your onion rings done.
